I really enjoy cooking and always have. Trying new recipes, deciding what we like and making any necessary changes is fun and creative (at least for me).
Like most bloggers who write and post about a number of different things, my recipes are all over the place. This is a great summer recipe for when you have extra basil and tomatoes lying around. You can make it vegan (just don’t add cheese), gluten free (by changing the pasta) and is great both warm and cold for lunch the next day.

This chicken dish is one of my son’s favorites. The sauce is sweet and tangy. When you bake the chicken the sauce gets sticky and caramelized and it’s really yummy. Serve it over rice or with sweet potatoes and a veggie.
