It’s been a while since I shared a recipe because I tend to make the same things over and over again. Then I came across this recipe for Healthy Korean Ground Beef from Slender Kitchen on Pinterest. We don’t tend to eat a lot of beef in our house. Personally, I find it a bit heavy for every day. So I worked my own magic on the recipe and turned it into Saucy Korean Turkey with Vegetables and Cauliflower Quinoa!
This recipe is so easy to make that I honestly think I could make it every week and still love it. The key is in the amazing sauce that Kristen created.
To add to the super tasty sauce, I decided to include a slew of different stir fried vegetables to the recipe to increase the vitamin and fiber count.
I also really like using cauliflower rice to make dishes a bit lighter and healthier than using plain white rice. With this particular meal, I decided to make cauliflower rice and add quinoa for even more nutrition and fiber.
In this recipe I make the cauliflower rice using my food processor. You can choose to make it yourself or buy the pre packaged cauliflower rice. Whatever works for you.
What you Need to Make Korean Turkey with Vegetables and Cauliflower Quinoa

- Food processor
- Medium sized pot
- Non stick wok
- Cutting board
- Good knife
- Fine grater (for mincing your garlic)
Ingredients for Korean Turkey with Vegetables and Cauliflower Quinoa
For the Cauliflower Quinoa
1 cup of quinoa
1/2 a large head of cauliflower
To make the quinoa, place one cup of quinoa in your pot along with 1.5 cups of water or vegetable broth. Cook on high. Once the quinoa and water are boiling, reduce the heat to low, cover the quinoa and cook on low for 13 to 15 minutes or until all the liquid is absorbed.
To make the cauliflower rice, cut the large cauliflower head in half and then into smaller chunks.
Place the chunks into your food processor and use the food processor button to turn the cauliflower chunks into “rice”. You might end up with some large chunky pieces, either take them out and use them for something else or take out the chopped cauliflower (so it doesn’t get too small) and run the chunky bits through the processor again.
Once the cauliflower rice is chopped up. Set it aside and wait until the quinoa is cooked.

For the Vegetables
Choose whichever veggies you’d like. I personally used chopped red peppers, sugar snap peas and shiitake mushrooms. Just wash them and chop them up so they are ready to be cooked when the time comes.
For the Saucy Korean Turkey
1 lb of ground turkey or chicken
1/8 cup of gluten free Tamari sauce
1/8 cup of coconut aminos
2 tablespoons of brown sugar
2 teaspoons of sesame oil
1 teaspoon of Sriracha
1 minced garlic clove
1 teaspoon of crushed red pepper (my husband likes spicy food so adjust this to your liking)
1 tablespoon of minced ginger
Combine all of the sauce ingredients in a small bowl: Tamari sauce, coconut aminos, brown sugar, sesame oil, sriracha, garlic, crushed red pepper and ginger. Once combined, you can set it aside and get cooking.
Warm up your wok by putting it on medium on a large burner. Spray the wok with olive oil spray to avoid getting anything stuck.
Dump the cooked quinoa and the riced cauliflower into your wok. Cook the quinoa and cauliflower rice until the cauliflower rice is browned. Usually around 5 to 7 minutes.
Once the cauliflower and quinoa are well mixed and warm, place the warmed up mixture back into the pot you cooked the quinoa in. Cover the pot and let it sit.
Next step to make Korean turkey with vegetables and cauliflower quinoa is to stir fry your veggies. Just use the same wok, spray it again with olive oil spray and cook the vegetables for around 5 to 8 minutes depending on the type of vegetables.

Once the vegetables are cooked – you want them to be a bit on the crispy side, take them out of the wok and put them in the pot with the quinoa and cauliflower rice.
Next step is to cook your turkey. Make sure it’s fully cooked so check to ensure there are no pink bits and that it’s appropriately browned.
Once the turkey is cooked, add in the quinoa and cauliflower along with the stir fried vegetables. Mix everything to make sure it’s warmed up and add the delicious sauce.
