I’m always looking for simple weeknight meals. As long as the recipe is easy, healthy and quick I’m ready to give it a try. Since we enjoy South Western flavours in our house, I decided to create my own concoction – 8 ingredient BBQ chicken burrito bowls.
These BBQ chicken burrito bowls are healthy, super easy to make and fun to modify – feel free to add your own different veggies and spices. These bowls are also great for lunch the next day.

Ingredients for BBQ Chicken Burrito Bowls
You only need 8 easy ingredients for this super simple recipe:
1 cup uncooked quinoa
2 cups vegetable broth
BBQ chicken (already prepared – easy to find at your local grocery store)
1 cup chopped red bell peppers
1 cup frozen black beans
1 cup frozen corn
1 cup frozen chopped kale
1 cup salsa of choice

Steps to Make BBQ Chicken Burrito Bowls
Make the quinoa per the package directions. To add additional flavour, I like to use vegetable broth in place of the water.
To make quinoa, boil one cup of quinoa with 1 3/4 cups of vegetable broth in a medium sized pot. Once the quinoa is boiling, turn down the heat to low and let it simmer, covered, for around 15 minutes.
Once the liquid has been absorbed, the quinoa is done. After the quinoa is cooked, set it aside.
While the quinoa is cooking, gather your frozen produce (corn, black beans and kale). Chop the red peppers into bite sized pieces.
Cook the frozen corn and black beans in a large pan sprayed with olive oil spray.
Add the chopped peppers to the pan and cook all together.
Cut up the BBQ chicken into pieces while the corn, beans and peppers are cooking.
Add the chicken and kale to the corn, beans and peppers. Make sure everything is heated through.
Add one cup of salsa to the chicken and cooked beans/veggies.
Once the mixture is cooked, place the quinoa in bowls and then top with the chicken mixture. Now your BBQ chicken burrito bowls are ready for you and your family to enjoy!
