We just finished a wonderful family holiday – Rosh Hashanah, the Jewish New Year. As a part of the holiday we have two big family dinners and this year one of the meals was at our house. We had 12 guests for dinner and I made my favourite slow cooker turkey breast as one of the main dishes. Of course, I made too much food and we had a lot of leftovers. I wanted to make a healthy dish with my leftover turkey so I decided to create my own leftover turkey and cauliflower fried rice.
The cauliflower fried rice is inspired by Kelly’s recipe on Eat Yourself Skinny. Kelly’s recipe is yummy and healthy but with a couple of additions I was able to make it a great way to reuse leftover turkey in a healthy and delicious way. I have to tell you, this dish was a huge success and I can’t wait to make it again!
What you Need to Make Leftover Turkey and Cauliflower Fried Rice

Ingredients to Make Leftover Turkey and Cauliflower Fried Rice
- 1 tablespoon of sesame oil
- 1 clove of garlic minced
- 1 teaspoon of minced ginger (split in half)
- 1 head of cauliflower
- 2 eggs, beaten
- 1 1/2 cups of frozen veggies (I used a mixture of carrots, peas and corn)
- Leftover turkey or chicken
- 1/4 cup tamari sauce
- Pinch of red pepper flakes
- 1 tablespoon of brown sugar
How to Make Leftover Turkey and Cauliflower Fried Rice
Cut your cauliflower into florets. Then put the florets into your food processor and chop them up until they become “rice” sized.
Take your leftover turkey and shred it up a bit so that it’s more bite sized.
Warm up your wok on medium heat and add the tablespoon of sesame oil. Once it’s a bit warmed up, add in your garlic and half of your ginger and stir until fragrant. This will take a couple of minutes.
When the wok, garlic and ginger are sauteed, add the frozen veggies.
While the veggies are cooking, combine the remaining ginger, tamari sauce, brown sugar and red pepper flakes to create the sauce.

After the veggies are warmed up, push them over to the side and pour in your beaten eggs.
Let the eggs cook for a bit and then mix the mostly cooked eggs with the cooked veggies. Once the eggs are completely cooked through, add the shredded leftover turkey and the cauliflower rice. The turkey is already cooked but the cauliflower rice could use some warming up since it’s otherwise raw.

As you’re warming up the leftover turkey, cauliflower rice, egg and veggie mixture, add the sauce and cover everything with the sauce.
Once everything is cooked through, it should take around 7 minutes, your cauliflower fried rice with veggies and leftover turkey is ready to enjoy.
