The low iodine diet can totally suck. If you don’t think outside the box a bit you’ll end up eating bland and tasteless food the entire time you’re stuck on the diet. One thing I love is pasta. I’ve made my low iodine pasta with homemade tomato sauce and with lentils. I also love avocados! They are allowed on the LID so there must not be too much iodine in avocado so I go to town with this creamy avocado pasta.
This is a super easy avocado pasta to make at home – it’s quick, healthy and vegan as well.
Quick Low Iodine Diet Avocado Pasta

My modification of this vegan avocado pasta is based on Oh She Glows creamy avocado pasta. The original recipe is from one of my absolute favourite cookbooks, Angela Liddon’s Oh She Glows Cookbook. I’m a big fan of Angela’s recipes and have followed her blog by the same name for several years. All of her recipes are vegan, full of veggies, healthy and delish. Since they start out vegan it makes it a bit easier for me to modify the recipes to fit into the restrictions of the low iodine diet.
I’ve also made the recipe gluten free by using brown rice pasta. There is some controversy around eating rice on the low iodine diet, but my doctor did not mention any issues so I ate rice. Ingredients to make Quick Avocado Pasta Sauce
1 clove of garlic
1/4 cup of fresh basil
4 teaspoons of fresh lemon juice
1 tablespoon of olive oil
1 ripe medium avocado
dash of pepper
Steps to make Quick Avocado Pasta Sauce
Peel and mince your garlic.
Wash your basil and tear leaves into pieces.
Peel your avocado and chop it into medium size pieces.
Throw all of your ingredients into your food processor.
Blend everything together until it gets smooth and creamy (try to resist licking the sides of the bowl).
Make your pasta by following the directions on the package.
Once the pasta is ready, drain the pasta well and then put it back in the pot along with the avocado pasta sauce.
Mix it around to warm up the sauce.
Portion out the pasta and then sprinkle with nutritional yeast and enjoy!
