What do you have for breakfast every morning? Cereal? A bagel? Or do you even eat breakfast at all? As a part of my attempt to put myself first, I’m working on making healthy meal choices especially at breakfast.
Starting off the day with a healthy meal is important if you want to maintain your energy levels and have a productive morning. Our mornings are hectic and we don’t have much time to get ready and eat well.
My go to morning recipe is a vegan superfood smoothie made with spinach, fruit, almond milk and healthy add ins. This vegan superfood smoothie is gluten free and full of fiber and protein.
Some of the superfoods in this smoothie include spinach, chia seeds, chlorophyll and blueberries.
Spinach is awesome because it’s full of fiber, antioxidants and nutrients. Putting spinach in a vegan superfood smoothie is an easy way to sneak veggies into your morning routine. It’s also the only way I can get my son to eat a green leafy veggie.
Chia seeds are a great source of fiber, protein, calcium and healthy fats. They can also help keep you full due their binding properties. You can read more about chia seeds in this post.
Chlorophyll is an “internal deodorizer”. It also helps reduce inflammation and helps your body gently detox. I’m not sure about all of these claims but if it’s good enough for plants then it’s good enough for me!
I really love using frozen blueberries in my smoothies. It keeps the smoothie cool and refreshing and the blueberries add numerous health benefits. These little berries have a high amount of antioxidants, are low on the glycemic index and contain a bunch of fiber.

Two handfuls of washed organic spinach
1 cup of nut milk (almond, cashew etc – it’s up to you)
1 scoop of Vega protein powder
1 tablespoon of chia seeds
1 tablespoon of liquid chlorophyll
1 cup of frozen blueberries
How to Make a Vegan Superfood Smoothie
I used to just combine all of the ingredients in my blender (this is the one I use) but then I read about a trick on the Simple Green Smoothies blog. They suggest adding your spinach and nut milk to the blender first, doing a quick mix and then adding everything else.
It might look a bit funny, but by mixing the spinach and nut milk first it creates a much less chunky smoothie. I don’t know about you but the fewer chunks in my smoothie, the better.
After you’ve blended the spinach and nut milk for a few seconds, add in the chia seeds, Vega powder and chlorophyll.
Once these fabulous superfood extras have been added then you can mix in the frozen blueberries and banana. The order is important so that the superfood mix ins get properly blended into the smoothie.
Blend the mixture until all of the lumps are gone and you’ve got a healthy, nutrient dense breakfast that’s full of fiber, antioxidants and protein.
